Dad's Roast Beef

A classic roast beef with a flavorful herb crust

Ingredients

Ingredients:

  • 1.5-2 kg whole sirloin roast (thick cut, not thin)

  • Thyme

  • Black pepper

  • Salt

  • French mustard

  • Olive oil

  • Shallots, halved

  • Beef fat trimmings

  • Garlic slices

  • Mushrooms

  • Carrots

Preparation

Preparation:

  1. Leave a thin layer of fat on top of the roast, trimming excess fat. Reserve the trimmings

  2. Rub the roast with thyme, black pepper, salt, French mustard, and a little olive oil. Optionally, add garlic slices. Ensure all sides are well-coated

  3. Allow the roast to marinate for at least a few hours. For best results, marinate overnight

  4. Preheat the oven to 200°C (390°F)

  5. In a roasting pan, place the halved shallots and reserved fat trimmings. Optionally, add mushrooms and carrots

  6. Place the roast in the pan with the fat layer on top

  7. Roast on the middle rack of the oven at 200°C (390°F) for 20-25 minutes, depending on the thickness of the meat

  8. Reduce the oven temperature to 120°C (250°F) and continue roasting for another 20-25 minutes
