Dad's Roast Beef
A classic roast beef with a flavorful herb crust
Ingredients:
1.5-2 kg whole sirloin roast (thick cut, not thin)
Thyme
Black pepper
Salt
French mustard
Olive oil
Shallots, halved
Beef fat trimmings
optional
Garlic slices
Mushrooms
Carrots
Preparation:
Leave a thin layer of fat on top of the roast, trimming excess fat. Reserve the trimmings
Rub the roast with thyme, black pepper, salt, French mustard, and a little olive oil. Optionally, add garlic slices. Ensure all sides are well-coated
Allow the roast to marinate for at least a few hours. For best results, marinate overnight
Preheat the oven to 200°C (390°F)
In a roasting pan, place the halved shallots and reserved fat trimmings. Optionally, add mushrooms and carrots
Place the roast in the pan with the fat layer on top
Roast on the middle rack of the oven at 200°C (390°F) for 20-25 minutes, depending on the thickness of the meat
Reduce the oven temperature to 120°C (250°F) and continue roasting for another 20-25 minutes
Notes:
Ensure the roast is well-coated with seasoning for maximum flavor
Adjust the roasting time based on the thickness of the meat and your preferred level of doneness
