Dad’s Roasted Chicken

Juicy roasted chicken in a mustard, soy, and wine marinade

Ingredients

Ingredients:

  • 1 whole chicken, cut into pieces

  • 3 tbsp olive oil

  • 1 tbsp mustard

  • 3 tbsp soy sauce

  • 1 cup dry white wine

  • Salt, to taste

  • Black pepper, to taste

  • ½ tsp sweet paprika

  • ½ cup boiling water

Preparation

Preparation:

  1. Preheat oven to 180°C (350°F) on turbo setting

  2. In a large bowl, whisk together olive oil, mustard, soy sauce, wine, salt, pepper, and paprika

  3. Add chicken pieces and toss to coat well

  4. Optional: Let marinate for 30 minutes or more

  5. Transfer chicken to a baking dish and pour boiling water around the edges (not over the chicken)

  6. Roast for 45–60 minutes, until golden and fully cooked

  7. Occasionally baste with pan juices for extra flavor

Notes

Notes:

  • Marinating longer improves flavor

  • Add diced potatoes to the dish before roasting for a complete meal

  • Sliced onions can be added for sweetness
