A Mexican-style corn salad

Ingredients

Ingredients:

  • 2 cans corn, drained

  • 1 small bunch dill, finely chopped

  • ½ red onion, finely chopped

  • ½ red bell pepper, finely chopped

  • 4-5 dill pickles, finely chopped

  • 2 tbsp mayonnaise

  • Lemon juice, to taste

  • Salt, to taste

  • Black pepper, to taste

Preparation

Preparation:

  1. Rinse the dill thoroughly, then chop it finely

  2. Finely chop the red onion, red bell pepper, and dill pickles

  3. In a large bowl, combine the corn, onion, bell pepper, pickles, and dill

  4. Add the mayonnaise, followed by salt, black pepper, and a splash of lemon juice

  5. Stir everything together and adjust the seasoning to your preference

Notes:

  • It's recommended to choose the type of corn based on your preferred sweetness level. Daucy corn is not too sweet and works great

  • Feel free to tweak ingredient amounts based on personal taste
