Corn Salad by Shani
A Mexican-style corn salad
Ingredients:
2 cans corn, drained
1 small bunch dill, finely chopped
½ red onion, finely chopped
½ red bell pepper, finely chopped
4-5 dill pickles, finely chopped
2 tbsp mayonnaise
Lemon juice, to taste
Salt, to taste
Black pepper, to taste
Preparation:
Rinse the dill thoroughly, then chop it finely
Finely chop the red onion, red bell pepper, and dill pickles
In a large bowl, combine the corn, onion, bell pepper, pickles, and dill
Add the mayonnaise, followed by salt, black pepper, and a splash of lemon juice
Stir everything together and adjust the seasoning to your preference
Notes:
It's recommended to choose the type of corn based on your preferred sweetness level. Daucy corn is not too sweet and works great
