A classic Caesar salad with a rich, homemade dressing

Ingredients

Ingredients:

  • 4 cloves garlic, crushed into a paste

  • 2 anchovy fillets, crushed into a paste

  • 2 egg yolks

  • 30ml lemon juice

  • 1 tbsp Dijon mustard

  • A pinch of coarse salt

  • ~200ml Neutral oil (such as Canola), as needed

  • ½ cup finely grated Parmesan cheese

  • Romaine lettuce, roughly chopped

  • Croutons

  • Chicken breast, seasoned with salt and pepper, seared on a hot skillet, and sliced into long strips

  • Red onion, sliced into strips

Preparation

  1. In a bowl, mix the garlic and anchovies with a pinch of salt until a paste is formed

  2. Add the egg yolks, mustard, and lemon juice, and mix well

  3. Whisk while gradually adding the oil until the dressing achieves a smooth and uniform texture

  4. Add the Parmesan cheese and mix well

  1. In a large bowl, combine all the salad ingredients

  2. Add the dressing to the salad and mix well until all the vegetables are coated with the dressing

  3. Before serving, sprinkle Parmesan shavings on top for a gourmet touch

Notes:

  • It is recommended to soak the garlic cloves in boiling water for half a minute to a minute to eliminate the sharp bite

  • Start with 15ml of lemon juice and add the rest according to taste

  • For the optimal dressing texture, use a whisk or a hand blender

  • Other toppings such as sun-dried tomatoes or roasted nuts can be added for texture variation

  • This salad is best when fresh. It is recommended to prepare just before serving and add the dressing right before serving
