Banana Chocolate Chip Cake by Shani
Moist banana loaf cakes packed with chocolate chips
Ingredients:
2 ripe bananas, mashed
4 large eggs
1 cup sugar
¾ cup vegetable oil
A pinch of salt
1½ cups self-rising flour
½ cup cocoa powder
250g chocolate chips (preferably 55% cocoa)
Preparation:
Preheat oven to 180°C
In a large bowl, whisk eggs and sugar until pale and foamy
Add oil, mashed bananas, and salt, and mix until smooth
Sift in flour and cocoa powder, and fold just until combined—do not overmix
Fold in 80% of the chocolate chips
Divide batter between two greased loaf pans and smooth the tops
Sprinkle remaining chocolate chips in a line down the center of each loaf
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean
Notes:
Use high-quality chocolate chips with at least 55% cocoa for best results
Mix white and dark chocolate chips for extra variety
If the tops brown too quickly, loosely cover with foil during the last 10 minutes
Cocoa to flour ratio can be adjusted to taste, keeping the total to 2 cups. For extra chocolatey cake, use 1 cup cocoa plus 1 cup flour
