Passover Spinach Pie by Dad
A delicious spinach pie for Passover
Ingredients:
Spinach, finely chopped
1 egg
Cheese (Bulgarian, Kashkaval, Mozzarella, Yellow cheese)
A bit of olive oil (optional)
Matzah meal (if the mixture is too liquid)
Optional: chopped green onion (white and green parts)
Preparation:
Preheat the oven to 180°C (350°F)
Finely chop the spinach with a knife
In a bowl, mix the chopped spinach with the egg and cheeses. Add a bit of olive oil if desired
Let the mixture rest for a bit. If it is too liquid, add some matzah meal to thicken
Pour the mixture into a baking dish
Bake in the preheated oven until golden and set
Notes:
Be cautious with the amount of cheese used, as the natural saltiness of the cheese can make the pie too salty. No additional salt is needed
For extra flavor and a more appealing look, sprinkle some cheese on top before baking
Adding some chopped green onion can enhance the flavor and texture
