Passover Spinach Pie by Dad

A delicious spinach pie for Passover

Ingredients

Ingredients:

  • Spinach, finely chopped

  • 1 egg

  • Cheese (Bulgarian, Kashkaval, Mozzarella, Yellow cheese)

  • A bit of olive oil (optional)

  • Matzah meal (if the mixture is too liquid)

  • Optional: chopped green onion (white and green parts)

Preparation

Preparation:

  1. Preheat the oven to 180°C (350°F)

  2. Finely chop the spinach with a knife

  3. In a bowl, mix the chopped spinach with the egg and cheeses. Add a bit of olive oil if desired

  4. Let the mixture rest for a bit. If it is too liquid, add some matzah meal to thicken

  5. Pour the mixture into a baking dish

  6. Bake in the preheated oven until golden and set

Notes:

  • Be cautious with the amount of cheese used, as the natural saltiness of the cheese can make the pie too salty. No additional salt is needed

  • For extra flavor and a more appealing look, sprinkle some cheese on top before baking

  • Adding some chopped green onion can enhance the flavor and texture
