Tomato Soup with Kabanos by Mom
A hearty, rich winter soup that's easy to prepare
Ingredients:
5-7 kabanos sticks
500g white beans, soaked in water
(Optional: pasta instead of beans)
A heap of tomatoes (about 15 medium-sized)
3 medium onions, chopped
6 garlic cloves, chopped (not crushed)
Dried chili, to taste
Salt, to taste
Black pepper, to taste
Preparation:
Finely chop all the vegetables ahead of time
In a large pot, sauté the onions until lightly browned
Add the garlic and cook for a few more minutes
Add the heap of tomatoes on top of everything, along with a bit of boiling water, and let it all cook
Gradually add the spices according to taste. The soup should be somewhat peppery (slightly spicy)
Once everything is cooked and starts to look like soup, add the sliced kabanos
Add the beans and cook together for about another 30 minutes
Notes:
You can use pasta, usually fusilli, instead of beans.
It’s a good idea to cook the beans in advance so they’re soft when added to the soup; otherwise, add them at the start of cooking
You can also add diced red bell pepper with the onion and garlic for extra flavor
