Red Lentil Soup by Shani

A hearty and warming soup with red lentils and vegetables

Ingredients

Ingredients:

  • 2 onions, chopped

  • 6-8 cloves garlic, minced

  • 2 medium carrots, grated

  • 1½ cups red lentils, rinsed

  • 2 tomatoes, diced

  • 150-200g tomato paste

  • 1 tsp turmeric

  • 1 tsp sweet paprika

  • ½ tsp smoked paprika

  • ¾ tsp cumin

  • 1½ tsp salt

  • ¼ tsp freshly ground black pepper

  • 8-9 cups boiling water

Preparation

Preparation:

  1. Sauté the onions in a large pot until soft and translucent

  2. Add the grated carrots and minced garlic, cooking until softened

  3. Add the diced tomatoes, stirring and cooking until they soften

  4. Stir in the red lentils, spices, and tomato paste until well combined

  5. Pour in the boiling water and bring to a boil

  6. Reduce heat and simmer on low for about 50 minutes, stirring occasionally to prevent sticking

  7. Taste and adjust seasoning as needed

  8. Continue cooking to your desired thickness if necessary

  • The soup is ready when it thickens; cooking time may vary

  • Use fresh garlic for the best flavor

  • Serving suggestion: drizzle olive oil on top, add a pinch of dried chili, and a splash of milk in each bowl
