Dad's Shakshuka

A simple and delicious cheese shakshuka

Ingredients

Ingredients:

  • 4-6 Eggs

  • 4~6 large tomatoes, pureed in a food processor

  • Olive oil (for frying)

  • A tiny pinch of paprika

  • Salt

  • Pepper

Cheeeses - the more, the better

  • Bulgarian cheese

  • Mozzarella

  • Kashkaval

  • Gouda

  • Edam

  • Other hard cheese

Preparation

Preparation:

  1. Heat olive oil in a pan

  2. Add the pureed tomatoes to the pan

  3. Season with salt, pepper, and a very small pinch of paprika

  4. Simmer until cooked

  5. Add the cheeses

  6. Mix well until the tomatoes and cheese melt into a uniform mixture

  7. Using a wooden spoon, create small wells in the mixture and crack eggs into them

  8. Cover the pan and cook until the eggs are done to your liking.

  9. Remove from heat a little before the eggs reach the desired doneness

Notes:

  • Use a variety of cheeses for a richer flavor

  • Adjust the seasoning to taste

  • If you feel comfortable handling the eggs, instead of creating wells, drop the egg from shoulder height. They will sink naturally into the sauce

  • Some variations include onion or red bell pepper, chopped thin and softened in the oil before adding the tomato.

  • A fun variation is to add a pinch of dried chilly or cayenne for a hint of a spicy note
