Piyaz by Dad

A classic Turkish bean salad

Ingredients:

  • White beans (small or medium)

  • White onion

  • Parsley

  • Salt

  • Wine vinegar

  • Olive oil

  • Tomatoes

  • Cucumbers

  • Kalamata olives

Preparation:

  1. Soak the white beans in water overnight

  2. Cook the soaked beans in water until they soften

  3. Meanwhile, soak the onion in salt until it softens (this is called "Terbiyeli" in Turkish, meaning "seasoned")

  4. Rinse the onion thoroughly after it has softened

  5. In a large bowl, mix the cooked beans and seasoned onions with parsley, salt, wine vinegar, and olive oil

  6. For those who like, add tomatoes, cucumbers, and/or Kalamata olives to the piyaz

Notes:

  • The term "Terbiyeli" in Turkish refers to onions soaked in salt, which are called "seasoned" or "educated" onions

  • Piyaz is typically served alongside Köfte, Turkish fried meatballs
