Simple Cold Potato Salad
A light and refreshing potato salad
Ingredients:
Potatoes
Green onion, finely chopped
Lemon juice
Olive oil
Salt
Black pepper (optional)
Preparation:
Boil the potatoes in water until they are tender
Slice the cooked potatoes into rings
Generously sprinkle chopped green onion over the potato slices
Drizzle lemon juice generously over the salad
Add olive oil and season with salt. Optionally, add a little black pepper to taste
