Simple Cold Potato Salad

A light and refreshing potato salad with lemon and green onion

Ingredients:

  • Potatoes

  • Green onion (1 per 3-4 potatoes), finely chopped

  • Lemon juice and olive oil in equal parts, enough to coat

  • Salt, generously

  • Black pepper (optional)

Preparation:

  1. Boil the potatoes in water until they are tender

  2. Slice the cooked potatoes into rings

  3. Generously sprinkle chopped green onion over the potato slices

  4. Drizzle lemon juice generously over the salad

  5. Add olive oil in roughly equal amount to the lemon juice

  6. Season generously with salt, and add a little black pepper if desired

Notes:

  • This is a ratio-based recipe - scale everything up or down based on how many potatoes you're using

  • The dominant flavor comes from the combination of lemon juice and salt, which pairs beautifully with the mildness of the potatoes, while the sweetness of the green onion adds a pleasant contrast
