Dad's Mayonnaise
A classic homemade mayonnaise
Ingredients:
500ml neutral oil (such as canola or sunflower)
3 egg yolks (no egg white at all)
1 tsp Dijon mustard
1 tsp whole grain mustard
½ tsp table salt
40–45ml fresh lemon juice
Preparation:
In the bowl of a standing mixer fitted with the whisk attachment, combine the egg yolks, Dijon mustard, and grain mustard
Whisk on medium speed until the mixture is smooth and uniform
With the mixer running, slowly drizzle in the oil in a thin, steady stream to create an emulsion
Once all of the oil is incorporated and the mayonnaise is thick, add the salt and whisk briefly to combine
Add the lemon juice and whisk until fully blended and the mayonnaise is silky
Notes:
Add the lemon juice only at the end to stabilize the emulsion
Use only fresh lemon juice for the best flavor
Keeps well refrigerated for several weeks (often longer if made with very fresh eggs and stored properly)
