Dad's Mayonnaise
A classic homemade mayonnaise
Ingredients:
500ml neutral oil (such as sunflower or canola)
3 egg yolks (ensure no traces of egg whites)
1 tsp Dijon mustard
1 tsp whole grain mustard
Salt, to taste
1 tbsp fresh lemon juice
Preparation:
In the bowl of a standing mixer with the whisk attachment, add the egg yolks, Dijon mustard, and grain mustard.
Start whisking on medium speed until smooth
With the mixer still running on medium, slowly drizzle in the oil in a thin stream to emulsify the mixture
Once the oil is incorporated, season with salt to taste
Add the lemon juice towards the end, whisking until well combined.
Notes:
Make sure to add the lemon juice at the end to avoid breaking the emulsion
