Chicken Patties in Hamusta Sauce

A savory and tangy chicken dish with zucchini and herbs

Sauce

  • 2 onions

  • 4 light zucchinis

  • 4 dark zucchinis

  • Celery leaves

  • 4-5 garlic cloves

  • A bunch of parsley

  • ½ tsp turmeric

  • Salt, to taste

  • Pepper, to taste

  • Bay leaves

  • Juice of half a lemon

Patties

  • 1 kg ground chicken

  • Soy sauce, to taste

  • Dried parsley

  • Philadelphia spice mix

  • Chicken seasoning

  • ½ cup soda water

  • Salt, to taste

  • Pepper, to taste

Preparation

Preparation:

  1. In a large pot, sauté the onions with the celery stalks until they begin to soften

  2. Add the zucchinis, cooking until they are golden brown

  3. Add the garlic and spices (turmeric, salt, pepper, bay leaves) and stir

  4. Roughly chop the celery leaves and parsley and add them to the pot

  5. Pour in boiling water until the vegetables are fully covered

  6. Cook until the vegetables are tender, then adjust seasoning as needed and let the sauce reduce

Patties

  1. In a bowl, mix the ground chicken with soy sauce, dried parsley, cream cheese, chicken seasoning, soda water, salt, and pepper

  2. Form the mixture into patties and lightly fry them until they are browned on the outside

  3. Add the browned chicken patties to the pot with the sauce

  4. Continue cooking for a few more minutes until everything is heated through and well combined
