Chicken in White Wine by Dad
A simple and flavorful chicken dish
Ingredients:
1 kg chicken pieces
Olive oil (for searing)
1 cup dry white wine
Salt, to taste
Black pepper, to taste
Boiling water (to cover the chicken)
2-3 sprigs fresh thyme (optional, for added aroma)
1 bay leaf (optional)
Preparation:
Heat a generous amount of olive oil in a large pot over medium heat
Add the chicken pieces and sear them on all sides until golden brown
Pour 1 cup of dry white wine over the chicken and allow it to simmer until the alcohol evaporates
Season the chicken with salt and black pepper to taste
Add boiling water to the pot until the chicken is fully covered
For extra flavor, add thyme sprigs and a bay leaf (optional)
Cover the pot and let it simmer on low heat for about 45 minutes to 1 hour, until the chicken is cooked through and tender
Notes:
Make sure to let the wine simmer until the alcohol has evaporated to avoid a strong alcohol flavor
The thyme and bay leaf add subtle flavor but can be omitted for a simpler dish
Adjust the seasoning to your preference, adding more salt or pepper if needed
