Turkish Börek by Dad
A traditional Turkish pastry with delicate yet rich flavors
Ingredients:
2 yufka sheets (Turkish phyllo dough)
250-300g hard yellow cheese (like Gouda or Kashkaval)
150g Bulgarian cheese
3 eggs
Black pepper, to taste
Salt, to taste
Butter or olive oil (or both)
Milk
Preparation:
Preheat the oven to 180°C (350°F)
Grease a round baking dish with butter
In a bowl, mix the cheeses, eggs, and black pepper. Add salt to taste
Cut the yufka sheets into strips about 7-10 cm wide
Spread a little of the cheese mixture on each strip, then roll and fold the edges to create a closed cylinder
Arrange the filled rolls around the edges of the baking dish, spiraling inward toward the center
Pour milk over the arranged rolls until the baking dish is almost full
Sprinkle some additional yellow cheese on top and drizzle with a bit of olive oil
Bake in the preheated oven until golden brown, about 1 hour
Notes:
If yufka is unavailable, you can substitute with spring roll pastry
You can use Gouda, Kashkaval, or simple cheeses like Noam as alternatives
