Pea Soup by Shani

A classic and comforting pea soup with deep flavor

Ingredients

Ingredients:

  • 2 medium onions, chopped

  • 2 medium carrots, grated

  • 1½ cups dried peas, rinsed

  • 1 bunch parsley

  • 6-8 cloves garlic, crushed

  • Salt, to taste

  • Black pepper, to taste

  • ¼ tsp cumin

  • ½ tsp turmeric

Preparation

Preparation:

  1. Rinse the dried peas thoroughly under running water

  2. In a large pot, sauté the chopped onions until translucent

  3. Add the grated carrots and cook until slightly softened

  4. Add the crushed garlic, salt, black pepper, cumin, and turmeric, stirring briefly to release the aromas

  5. Add the parsley and rinsed peas, stirring to combine

  6. Pour in 8-9 cups of boiling water, stirring to prevent lumps

  7. Bring to a boil, then reduce the heat to low

  8. Simmer for 2-3 hours, until the peas are soft and the soup has a rich, pea flavor

  9. Remove from heat and let cool completely

  10. Blend the soup with an immersion blender or in batches in a food processor until smooth

  11. For a smoother texture, strain through a fine sieve or blend in additional batches if desired

Notes:

  • To serve, ladle the hot soup into bowls, drizzle with olive oil, and add a splash of milk and a sprinkle of dried chili, if desired

  • Adjust texture by blending more or straining; a slightly textured version adds depth
