Marinated Aubergine by Yossi

A simple and flavorful marinated aubergine

Ingredients

Ingredients:

  • 2 medium aubergines, sliced into 0.5 cm thick slices

  • 3-4 tbsp olive oil (for brushing)

  • 3 cloves garlic, thinly sliced

  • 2 tbsp balsamic vinegar

  • 2 tbsp lemon juice

  • 2-3 rosemary sprigs

  • Salt, to taste

  • Pepper, to taste

Preparation

Preparation:

  1. Preheat the oven to 180°C (350°F)

  2. Brush both sides of the aubergine slices with olive oil, season with salt and pepper

  3. Place the slices on a baking sheet in a single layer and bake for 15-20 minutes until golden brown, flipping halfway through

  4. While the aubergines are baking, mix together the remaining olive oil, balsamic vinegar, lemon juice, garlic slices, and rosemary in a small bowl to make the marinade

  5. Once the aubergines are golden brown and tender, remove from the oven and arrange them on a serving dish

  6. Drizzle the marinade over the warm aubergines, allowing the flavors to absorb. Adjust seasoning to taste if needed

Notes:

  • Adjust the amount of lemon juice, balsamic vinegar, and rosemary according to your taste

  • The aubergines should be golden brown and tender when done
