Marinated Aubergine by Yossi
A simple and flavorful marinated aubergine
Ingredients:
2 medium aubergines, sliced into 0.5 cm thick slices
3-4 tbsp olive oil (for brushing)
3 cloves garlic, thinly sliced
2 tbsp balsamic vinegar
2 tbsp lemon juice
2-3 rosemary sprigs
Salt, to taste
Pepper, to taste
Preparation:
Preheat the oven to 180°C (350°F)
Brush both sides of the aubergine slices with olive oil, season with salt and pepper
Place the slices on a baking sheet in a single layer and bake for 15-20 minutes until golden brown, flipping halfway through
While the aubergines are baking, mix together the remaining olive oil, balsamic vinegar, lemon juice, garlic slices, and rosemary in a small bowl to make the marinade
Once the aubergines are golden brown and tender, remove from the oven and arrange them on a serving dish
Drizzle the marinade over the warm aubergines, allowing the flavors to absorb. Adjust seasoning to taste if needed
Notes:
Adjust the amount of lemon juice, balsamic vinegar, and rosemary according to your taste
The aubergines should be golden brown and tender when done
