Cheesecake by Mom

A classic, creamy cheesecake with a simple crust

Ingredients

Ingredients:

Dough

  • 3 egg yolks

  • ~70ml sour cream

  • 150g butter (or slightly less)

  • ¾ tsp liquid vanilla

  • Self-rising flour

Filling

  • 500-750g 5% white cheese

  • 1 container sour cream, plus any remaining from the second container

  • 3 egg whites, plus an additional egg if desired

  • ¾ cup sugar, plus about 1 tbsp

  • 1 packet vanilla sugar

Preparation

Preparation:

  1. Preheat the oven to 180°C (350°F)

  2. In a bowl, mix the egg yolks, sour cream, butter, vanilla, and enough self-rising flour to form a dough

  3. In another bowl, combine the white cheese, sour cream, egg whites, sugar, and vanilla sugar until smooth

  4. Lightly grease a baking pan and line it with the dough, pressing it into the bottom and up the sides

  5. Pour the cheese mixture over the dough

  6. Bake until the cake is set and lightly golden on top, about 50-60 minutes. Let it cool before serving

Notes:

  • For a taller cake, use 750g of cheese

  • You can adjust the sweetness by varying the amount of sugar
