Olive and Cheese Muffins by Mom
Savory muffins with olives and cheese, perfect for a quick snack or side dish
Ingredients:
3 large eggs
1 container (200g) cottage cheese
200g grated yellow cheese (cheddar or gouda)
½ cup (120ml) vegetable oil
1 can (200g) sliced green olives, drained
1 cup (140g) self-rising flour
Optional: ¼ cup sesame seeds for topping
Preparation:
Preheat the oven to 180°C (350°F)
In a large bowl, whisk the eggs until smooth, then add the cottage cheese, grated cheese, vegetable oil, and olives
Stir until the mixture is well combined
Gradually add the self-rising flour, mixing just until the batter comes together
Lightly grease a muffin tin or line with paper muffin cups
Spoon the batter into each cup, filling about ¾ full
If desired, sprinkle sesame seeds on top
Bake for 30 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean
Notes:
For richer flavor, try mixing cheeses like parmesan or feta with the yellow cheese
Black olives can be used instead of green for a stronger flavor
These muffins are best served warm but can also be enjoyed at room temperature
