Olive and Cheese Muffins by Mom

Ingredients

Ingredients:

  • 3 large eggs

  • 1 container (200g) cottage cheese

  • 200g grated yellow cheese (cheddar or gouda)

  • ½ cup (120ml) vegetable oil

  • 1 can (200g) sliced green olives, drained

  • 1 cup (140g) self-rising flour

  • Optional: ¼ cup sesame seeds for topping

Preparation

Preparation:

  1. Preheat the oven to 180°C (350°F)

  2. In a large bowl, whisk the eggs until smooth, then add the cottage cheese, grated cheese, vegetable oil, and olives

  3. Stir until the mixture is well combined

  4. Gradually add the self-rising flour, mixing just until the batter comes together

  5. Lightly grease a muffin tin or line with paper muffin cups

  6. Spoon the batter into each cup, filling about ¾ full

  7. If desired, sprinkle sesame seeds on top

  8. Bake for 30 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean

Notes

Notes:

  • For richer flavor, try mixing cheeses like parmesan or feta with the yellow cheese

  • Black olives can be used instead of green for a stronger flavor

  • These muffins are best served warm but can also be enjoyed at room temperature
